It’s cool, it’s refreshing, it’s reminiscent of sushi … but it’s filled with only veggies and fruits. It may not seem possible, but a completely vegan ceviche does exist! Here, our Citrus Salt + Pepper Seasoning envelops avocado, citrus, onion, and grapefruit, which when combined lend a ceviche-like texture and flavor. Whip this out for a refreshing appetizer or side to satiate on a hot summer day.
Ingredients
- 1 large grapefruit
- 2 medium oranges
- 2 large avocados diced
- 1/2 cup red onion finely chopped
- 1/2 cup fresh cilantro chopped
- 1/2 medium jalapeno seeds removed, finely chopped
- 1/4 cup lime juice about 2 limes
- Colima Sea Salt to taste
- 1 tsp Ava Jane's Kitchen Citrus Salt & Pepper
Instructions
- Begin by peeling the skins from the grapefruitand oranges. Then, slice across the center lines to make ¼″ thick rounds.Gently pull the rounds apart to make wedges of fruit, about 2 segments each.
- In a medium serving bowl, combine the citrus,avocado, onion, cilantro, jalapeño, lime juice, Citrus Salt and PepperSeasoning, and salt. Gently toss to combine.
- Let the flavors combine for 5-10 minutes, giveanother gentle toss, and serve with plantain or tortilla chips.
