This super fast and easy omelet is the answer. It’s got loads of protein, veggies, and tons of flavor. The flavor comes from a bold and zesty seasoning, but also from peppers that have been sautéed with onions and steak. A bit of sharp cheddar adds a creamy tang that balances everything out.

Cheddar Steak and Jalapeno Omelet

  • In a nonstick skillet, heat the oil to medium high heat. Add the steak and cook until done to your liking. Remove from pan. 
  • Add the jalapeños and onions and cook until softened. Add the garlic and Los Muertos Barbecue. Cook for another minute, remove from pan and lower heat to medium low. 
  •  Add the eggs and cook for a minute until the edges are set. Lift the edges carefully and let the liquid flow underneath the edges. When most of the egg is cooked, add the steak and veggies to one side. Top with cheddar. 
  • Carefully fold in half and continue cooking for another minute or so until egg is fully cooked and cheese is melted. 
  • Slide onto a plate and serve topped with sour cream and chopped green onions if desired. 

Notes

Use this again: This is best eaten immediately after cooked. 
For one or two servings: Recipe can be doubled — cook all of the vegetables and steak together and then make the omelets separately, dividing the veggies between them. 
Store leftovers: This is best eaten immediately after cooked.
