One of my goals for the year is to eat less takeout. We don’t eat it a lot to begin with, but with the cost of everything going up, reducing the little bit that we do seems like a good idea.
Of course, these ideas always come to me when I’m in the mood to make some amazing and complex dinner, and at the time I’m thinking that I can do this every night.
Reality is much different. Reality is working all day, being tired and hungry and definitely not wanting to make something complicated, or anything at all.
This is when recipes like this come in handy. I almost always have these few ingredients, and it takes such little prep and cleanup that I can convince myself to do it instead of ordering out.
This easy chicken gets flavor from lots of garlic, and one of my favorite seasoning blends — Ava Jane’s Kitchen’s Citrus Salt and Pepper. Lemon gives it even more of a boost. Serve this with any green vegetable you have on hand.
Ingredients
- 2 tablespoons Ava Jane’s Kitchen Avocado Oil
- 4 cloves garlic minced
- 1 teaspoon Ava Jane’s Kitchen Citrus Salt and Pepper
- 1 lemon sliced
- 2 chicken breasts pounded to an even thickness
Instructions
- Preheat oven to 425 degrees F.
- Put the avocado oil in a bowl and add the garlic and the Roadside Chicken Spice Blend and stir.
- Lay the chicken breasts on a baking sheet and brush with mixture.
- Lay lemon slices on top.
- Bake for 15-20 minutes, until chicken has reached an internal temperature of 165.
- Serve immediately.
