Just because a weeknight meal is quick, doesn’t have to mean it also has to be flavorless. This one-pot Mexican quinoa combines all of your favorite Mexican foods, tossed with nutty quinoa and our feisty Ava Jane’s Kitchen Roadside Chicken for a flavorful zing. And the best part? You can whip it up in under 30 minutes.

This is a great recipe. I made it tonight for dinner but substituted the quinoa for brown rice and the lime juice for lemon juice (Only because I didn’t have any limes or juice in the house), and for the fire roasted diced tomatoes, I used a can of organic diced tomatoes. Everything else I left the same for ingredients. I also added a lb of cooked grassfed ground beef to the mixture, and it was delicious! Thanks for always sharing a new recipe with us thru email. Some I try & some I don’t, but this one was a winner even the way I did it!
