I know oatmeal doesn’t seem that exciting. I eat it a lot when it gets cold out, and rarely am I excited about it. I just know that it will be filling and is good for you.
Occasionally, though, I stumble upon some oatmeal that I do enjoy eating for breakfast. And this is one of those.
It’s got everything your favorite fall drink has, but also with the addition of fiber and nutrients. It’s sweetened with Yucatan Honey, spiced up with Pumpkin Pie Spice, and has and added kick from a dash of instant espresso powder. So, you truly do get all the goodness in one heartwarming bowl.
You can add pureed pumpkin or leave it out — it adds a bit of nutrients, but the flavor is from the spice. I usually add it if I have some leftover from something else, but I don’t open a can just for this.

Ingredients
- 1 tbsp butter
- 1 cup rolled oats
- 1/2 tsp instant espresso powder
- 1/2 tsp Ava Jane's Kitchen Pumpkin Pie Spice
- 1 cup water
- 1 cup milk
- 1 tbsp Ava Jane's Yucatan Honey
- 1 tbsp pumpkin puree optional
- 1/4 cup chopped pecans
- Colima Sea Salt to taste
Instructions
- In a medium saucepan, add the butter and melt over medium heat. Add the oats and toast for about a minute. Add the espresso powder, pumpkin spice, water, milk, honey and pumpkin puree if using.
- Bring to a low simmer, and simmer for about 10 minutes.
- Stir in the pecans and serve with a sprinkle of Colima Sea Salt.
Can you use dried pumpkin powder
I’ve never used dried pumpkin powder so I can’t be sure. You may be able to substitute it for the pumpkin, but unless it has spices in it, it won’t have the same flavor as the pumpkin pie spice.
