I’ve never been a huge cauliflower fan, but you can coat almost anything in buffalo sauce and I will eat it. This is one of those things that has been popping up on restaurant menus everywhere lately, usually as an appetizer. In this case, it’s a perfect side dish to some Los Muertos Barbecue seared steak.
You would think that a cauliflower dish would be somewhat healthy, but when I asked at a restaurant what the ingredients were, I was surprised to learn it’s flour, breadcrumbs, and butter. It was tasty, but I thought you could make a healthier version without all the refined carbs, and I was right.
Instead of flour or breadcrumbs, I used almond flour and a bit of Ava Jane’s Kitchen Avocado Oil, and left out the butter. You get tons of flavor from the hot sauce, so I don’t think all that butter is necessary.
Once coated, just bake in a hot oven, and then coat with hot sauce. A quick broil for crispness makes them perfectly tender and delicious. For the steak, a sprinkle of Blackened Fish adds some heat and flavor and then a sear in avocado oil makes it perfect. Serve sliced with the cauliflower, some blue cheese or ranch and celery sticks of that’s your thing.
Ingredients
Cauliflower:
- 1 head cauliflower cut into florets
- 1 cup almond flour
- 1 cup milk of your choice
- 1 tablespoon Ava Jane’s Kitchen Avocado Oil
- 1/2 cup hot sauce I used Frank’s
Steak:
- 1 pound sirloin steaks
- 1 tablespoon Ava Jane’s Kitchen Blackened Fish seasoning
- 2 tablespoons Ava Jane’s Kitchen Avocado Oil
To serve:
- Celery sticks
- Blue cheese or ranch dressing
Instructions
- Preheat oven to 425 degrees F.
- Put the cauliflower in a plastic freezer bag with the almond flour, milk, and avocado oil. Spread on a foil lined baking sheet and bake for 20 minutes. Remove and toss with the hot sauce. Bake for 10 more minutes, and switch to broil. Broil until lightly charred and crisp.
- For the steak, season with the Blackened Fish. Heat the oil in a heavy skillet and cook the steaks until done to your liking. Let rest for a few minutes, slice, and serve with the cauliflower and desired accompaniments.
Sounds wonderful. My question is is there a healthy ranch dressing or even a healthy blue cheese dressing? By the way I am a huge fan of Blue cheese.
Michael — My favorite store bought dressings are made by Bolthouse Farms (https://www.bolthouse.com/) They are made of yogurt, and are low in calories, but super tasty. I’m not sure if it’s the healthiest option, but if you want something in a pinch and don’t have to make it yourself, these are good.
Try Primal Kitchen dressings. Ingredient list is short and pronounceable. Close to my homemade dressing in taste.
I make my own ranch dressing: 1/2 cup each of coconut milk and mayo (I use the avocado oil mayo), 1 tsp each of garlic powder and dill, and 1/2 tsp of onion powder. Blend it with an immersion blender if you have one. My picky husband even likes it!

I am sure you know that butter has no carbs at all!! If you use grass fed organic cow milk butter you will be doing a favor for your body because that is a healthy fat. That is what I have been told by some really knowledgeable Keto folks. I do love your products and I am a member and use your spices just about everyday.
